        USA: LOBSTERS FISHERMEN IN THE MAINE
Bordered to the west and north by the Canadian province of  Quebec, to  the northeast  by  that of  New  Brunswick and  to the  southeast  by  the Atlantic  Ocean, the state  of Maine located in United States is the most  important territory of  the states  that make
up  the New  England  where  we finds  many  spaces  that  testify to the  former French
presence. Maine is also renowned for  its radiant  and enchanting  landscapes, its  rocky
and majestic coasts and its fisching ports with brightly colored boats like BAR  HARBOR
near the town of BANGOR where i met as Phil ROUSSEAU,Jason BARNEY and Bill
NEILMAN who are lobsters fishermen.
" I am of French-speaking  origin by my  name  ROUSSEAU  which is very  French and  have been living  in BAR HARBOR 
since 18 years as a fisherman  and my  speciality is  American lobster  also called  Canadian lobster" Phil tells me in a big
smile while arranging a locker aboard the ship  JAMES HARLSTON. "My fisching  area is essentially  coastal and i usually
set sail around  4 a.m.  to return  before dark  because the locker  drop-off area  changes  according  on the gradual war-
ming of the water in order to follow the migration of the lobsters. The lobster, which is a decpaod  crustacean, likes cold
seas and its distribution area is very vast which goes from almost  all of the  north-Atlantic  on the European side as well
as on the American and Canadian side".Raising the lockers is always a great moment during  a fisching campaign whate-
ver its duration and longevity as explained to me by Jason and Bill whom i find at the back of the ship." Because it gene-
rally travels over rocky bottoms, the lobster is  more easy  to capture  using traps  handled from  trap setters and  it lives
from the bottom of the infra-littoral at the limit of open areas at high tides under the rocks  where there  dug or found a
a burrow up to about 50 and  exceptionally  60 meters  deep.Our  profession, certainly fascinating, also  requires a lot of
patience and tenacity because our schedules are flexible and our attention to carry out good fisching campaigns".

I Go To The Sea Around 4 O 'Clock In The Morning

After a return from  fishing  at the  end of the day  of  February 18,  2019,  Phil, Jason  and Bill take  me to their  tanks or

they store their lobsters before their direct sales in short circuit to tourists and individuals in parallel  with the supply to

restaurants in the town of BAR HARBOR in addition  to the  surrounding  municipalities. "I have a job  that requires a lot

of  availability  because  being a  fisherman  accompanied  by  2 sailors  requires a  permanent  presence  on the fisching

grounds to earn a  good  living  generally  going to  sea around  4 O'Clock in  the morning while  taking into  account the 

risks  and  climatic  hazards of  pollution and  the storms  that affect us ".Phil  tells  me while  introducing  me to  his wife

Cathy who manages the stewardship and  management  of his farm  and whom  i enjoy  following  along the basins over-

looked by their fishponds or bathed in sumptuous lobsters."As you can see,the American or  Canadian lobster has a size

of approximately 81MM, which corresponds to lthe lenght of the cephalotorax ans this product,reputed  to be the finest

of crustaceans, can be steamed,in the oven or on the grill, but  if it has  been boiled, its head  must be pierced  after coo-

king finished in order to target the liquid contained under  its shell ". Explains Cathy  ROUSSEAU while pointing to me 3 "

beautiful lobsters which move forward with  gestures  in the bottom  of the basin. Meeting passionate  men and women

who practice trades exciting in a sea environment is always  enriching and this invigorating  getaway  on American gave

me another picture of America which is also a country that combines traditions and gastronomic pleasures.
